Matcha Pancakes with Tropical Fruits

These pancakes can be thrown together literally in a matter of minutes.

Start with the Matcha. Take a tsp of Matcha Green tea powder in a bowl and add some hot water to it. Whisk it to dissolve completely. Add to it the rest of the ingredients and whisk together. You can add more milk to achieve the right consistency of the batter.
In a frying pan drizzle some coconut oil, drop dollops of the batter and fry till you see bubbles on the surface, then flip. Cook for about a minute and take off the pan.

To assemble place the pancakes in a plate, drizzle some chocolate sauce / Nutella over it. Slice up all the fruits and lay besides them and top with some crunchy granola.

INGREDIENTS


Serves 2

75mg Green Mung Bean Flour
100 gms Whole Wheat flour
1tbsp Baking Powder
1 tsp Matcha Green Tea powder (blossomed in 2-3 tbsp hot water)
1 egg
1cup Almond Milk
2 tsp Vanilla extract
40 ml Coconut Oil (or oil of your choice)
1 tbsp Coconut Sugar (optional)
Passion fruit
Pineapple
Mango
Ice Apples
Coconut

Note
– You can substitute the flours to Spelt, Buckwheat, Oat flour or anything that works for you .
– This recipe has 1 tsp of Matcha, you can add more to make the colour greener, or a richer taste. I just feel they tend to get bitter, so do give it a taste test if you wish to add more
– Its nice to lightly sweeten the pancake batter. You can use Jaggery sugar, honey or maple syrup – any healthy sweetener you like. I omitted the sweetener this time as we do have a chocolate drizzle on top and a whole lot of fresh sweet fruits to go with it.
