Lychee Rose Popsicles

Peel the lychees and wash them well. De- seed them and blend them with ½ a glass of water in a heavy duty blender. Then pass the juice through a sieve to make sure we take out any unblended bits.At this point you may sweeten the juice to your liking, depending on the sweetness and tartness of the lychees.

Pour the juice equally into the six molds. They should reach about halfway. Tuck in some rose leaves at this point and Pop these in the freezer till they are about half set. It should resemble a slushie.

In the mean time, blossom the Basil seeds in half a cup if water. Simply mix them together and will for them to swell up. In a ¾ th glass of chilled water add the rose syrup and squeeze half a lime. Stir together and gently pour into the molds over the lychee juice.
Pour in some basil seeds over each mold and give it a gentle stir with the ice-lolly stick. Tuck in some more rose petals and cover. Add the lolly stick as per your mold instructions.

Freeze over night. The lollies are ready to serve.


INGREDIENTS


Makes 6

2 dozen fresh Lychees
½ glass water
Honey (optional)
1 lime
3 tablespoons Rose Syrup
¾ the glass water
2 tsp Basil seeds (sabza)
Rose petals (wash them well, use organic roses)
Ice Lolly Molds
Ice Lolly Sticks


METHOD
